Ingredients:
3-4 chicken breasts cooked and shredded
1/3 c honey
1/4 c lime juice
1 T chili powder
1 large can green enchilada sauce
shredded cheese
flour tortillas
Directions:
Combine shredded chicken, honey, lime juice, and chili powder and marinate for at least an hour. (If mixture is a little dry, add more honey and lime juice.) Fill a tortilla with the chicken mixture and desired amount of cheese, roll up, and place in a pan sprayed with cooking spray. Cover the enchiladas with the green enchilada sauce making sure all of the tortilla has some sauce on it. Add remainder of cheese on top. Heat oven to 350 and cook about 30 minutes or until heated through. This is an easy recipe to make more of and freeze for later.
